Disable Preview Windows and Rewrite in Recording Settings

Is there a way to avoid seeing the two preview windows after every recording, and is it possible to disable the rewrite?

      No, not currently.

      Sort of. You can change the insert text setting from “choose for me” to transcript in settings.
